Lamb Shanks in Red Wine

This month we are pairing our Short Street SGM with Deli-Co’s Lamb Shank for the ultimate food and wine pairing experience. This recipe, developed by Bernice van de Merwe, truly captures the simplicity of the Swartland.

Ingredients (serves 4 – 6 people)

  • 6 – 10 Deli-Co Lamb Shanks cut into 3cm pieces
  • Salt and freshly ground black pepper
  • 60 ml flour
  • 5ml finely ground cumin
  • 30 ml olive oil
  • 30 g butter
  • 1 onion – chopped
  • 2 minced garlic cloves
  • 4 carrots – finely diced
  • 2 celery stems, diced
  • 2 tins of canned tomatoes
  • 30 ml tomato paste
  • 250-300 ml Short Street SGM
  • 250g diced bacon

Gremolata

  • Peel of 2 lemons
  • 100ml Italian parsley
  • 2 minced garlic cloves
  • Olive oil to blend

Method

  1. Season meat with salt & freshly ground pepper
  2. Cover meat with the flour & cumin mix & keep separate
  3. Heat oil & butter in a medium size pan
  4. Sear the meat until golden brown & place in large casserole dish.
  5. Mix onion, garlic, carrots, celery, tomatoes & tomato paste with meat, add salt & pepper.
  6. Pour red wine over meat & sprinkle with bacon.
  7. Cover with tin foil & bake in a preheated oven at 160 C for 1 hour.
  8. Remove foil & bake for another hour until tender.
  9. Mix ingredients for Gremolata & sprinkle on meat once it’s out of the oven.
  10. Dish up & serve with mash or fresh bread, salad & a glass of Short Street SGM
