Amelia's Cheese Cake

Pastry:

250ml Cake Flour
60ml Sugar
5ml Baking Powder
1ml Salt
1 Egg (beaten)
50ml Butter
 
Mix flour, sugar, baking powder and salt. Rub butter into dry mixture. Add the beaten egg. Mix thoroughly and press into baking tin. Bake for 10 minutes at 200 degrees.
 
Filling:
6 Eggs (seperated)
250ml Sugar
3 x 250g Smooth Cottage Cheese
30ml Corn Flour
30ml Lemon Juice
500ml Cream
Salt
 
Mix cottage cheese, egg yolks, salt and corn flower. Add cream and lemon juice. Add sugar bit by bit.
 
Scoop filling onto the pastry and bake for 40 minutes at 180 degrees. Open the oven and let the cheese cake cool down inside the oven.
 
Ensure that it is thoroughly cooled down before removing from the tin to serve.
